Behind Le Matcha
I’ve always had a deep love for matcha. As a pastry chef with Japanese heritage, trained at the prestigious Le Cordon Bleu in Paris, and having worked alongside renowned pastry chefs, I came to appreciate it even more - not only for its vibrant flavor and color, but for the sense of calm and ritual it brings to my day. Over time, matcha has become an essential part of my lifestyle.
But finding truly great matcha outside of Japan was never easy. So much of what’s available is dull in color, bitter in taste, or filled with additives. I wanted to create something better something pure, vibrant, and rooted in tradition. I wanted to share the kind of matcha I always admired, straight from Uji, Japan - where the best matcha in the world is grown.
The search wasn’t simple. Especially during a global shortage, it felt nearly impossible to find a source that matched my standards. I reached out to dozens of suppliers, tasted endless samples until I found a small, family-owned farm in Uji. They had been cultivating tea for generations, and their values aligned perfectly with mine: quality, care, and tradition above all.
Vivid green, rich in umami, smooth and naturally sweet. It was the matcha I wanted.
